Chef Joseph Dolby joins 9 Beaches as the resort opens for its fourth season, after a record year. Bringing his extensive culinary talents and training to Bermuda , Chef Joseph takes pride in the fact that everything at 9 Beaches is made from scratch. "We make our own breads, fillet our own fish & meats, and make all of our desserts in house."

Chef Joseph earned his credentials at Canada 's prestigious Chateau Lake Louise, a five-star resort where he oversaw 120 cooks in seven restaurants. Offered the opportunity to specialize his efforts and enjoy the warmer clime of the Caribbean, Chef Joseph then moved to Grand Cayman to manage Breezes by the Bay, a lively local restaurant on the water, and made it a culinary hotspot. Chef Joseph was known for making the best conch fritters in Cayman.

Here at 9 Beaches, Chef Joseph has developed an eclectic, ever-changing menu with internationally inspired modern cuisine. Soft-sided cabanas stand on stilts and all have a stunning view of the Atlantic Ocean .
